Ingredients

225g plain flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
115g vegan butter
125g brown sugar
125g caster sugar
2 tbsp golden syrup
2 tbsp almond milk
1 tsp vanilla extract
150g Happi Oat Milk Chocolate (smashed to bits)

Method:

  1. Preheat your oven to 180°C (160°C fan)/Gas Mark 4 and line a baking tray with parchment paper.
  2. In a medium-sized bowl, sift together the flour, baking powder, bicarbonate of soda, and salt.
  3. In a separate large mixing bowl, beat the vegan butter and sugars together until light and fluffy.
  4. Add the golden syrup, almond milk, and vanilla extract to the butter and sugar mixture, and mix until well combined.
  5. Slowly add the dry ingredients to the wet mixture, mixing well after each addition.
  6. Stir in the smashed up chocolate until evenly distributed throughout the dough.
  7. Using a tablespoon or a cookie scoop, drop spoonfuls of the dough onto the prepared baking tray, spacing them about 5cm apart.
  8. Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.
  9. Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
  10. Serve and enjoy your delicious vegan chocolate chip cookies!
