225g plain flour
1 tsp baking powder
1/2 tsp bicarbonate of soda
1/2 tsp salt
115g vegan butter
125g brown sugar
125g caster sugar
2 tbsp golden syrup
2 tbsp almond milk
1 tsp vanilla extract
150g Happi Oat Milk Chocolate (smashed to bits)
- Preheat your oven to 180°C (160°C fan)/Gas Mark 4 and line a baking tray with parchment paper.
- In a medium-sized bowl, sift together the flour, baking powder, bicarbonate of soda, and salt.
- In a separate large mixing bowl, beat the vegan butter and sugars together until light and fluffy.
- Add the golden syrup, almond milk, and vanilla extract to the butter and sugar mixture, and mix until well combined.
- Slowly add the dry ingredients to the wet mixture, mixing well after each addition.
- Stir in the smashed up chocolate until evenly distributed throughout the dough.
- Using a tablespoon or a cookie scoop, drop spoonfuls of the dough onto the prepared baking tray, spacing them about 5cm apart.
- Bake in the preheated oven for 12-15 minutes, or until the cookies are golden brown.
- Allow the cookies to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely.
